Carrots are high in carotenoids, antioxidant compounds found in plants that are associated with a wide range of health benefits including a decrease of up to 50% in bladder, cervix, prostate, colon, larynx and esophageal cancer, as well as up to 20% decrease in postmenopausal breast cancer. Mom was right!, carrots really are good for your eyes. They’re a great source of lutein and zeaxanthin, two other carotenoids that, when working together, have shown enormous promise in protecting the eyes and helping to prevent macular degeneration and cataracts. Three medium carrots contain 60mg of calcium, 586mg of potassium,  little bit of magnesium, phosphorus, and vitamin C, and a whopping 30,000 IU’s of vitamin A, including 15,000 Units of beta-carotene. They also have 5g of fiber.

  1. Thanks for sharing this. I don’t like carrots that much but I’ll make it a point to buy some from now on. It shouldn’t be that hard to disguise them in the weeks menu =)
